While I personally do not follow a Keto diet, many of my friends do and I know it is becoming more and more popular as more people are being diagnosed with PCOS. These bombs are creamy and sweet and although they are high in fat content, they are extremely nutrient dense. Even though the whole Keto thing isn’t for me, these bombs definitely are.
-2 Medjool Dates, pitted
-1 T Ground Flax
-3 T Mini Semi-Sweet Chocolate Chips
-2 t Cinnamon
-1 1/2 c Coconut Shreds
-2 T Milk of Your Choice
-1/4 c coconut oil, melted
-1/2 c coconut butter, softened
-1/2 c of Pepitas
-1/2 c of cashews
-1 T Chia Seeds
-1 T cocoa (feel free to add more!)
- Place all ingredients into a food processor and process until a dough is formed.
- Form small (1 inch or so) balls out of this mixture and place in a container. Put these in the freezer to harden.
- When enjoying these, I like to let them sit out for 5-10 mins before so they get a little soft. Enjoy!
